When finished, set aside.In a large saucepan, bring water and broth to a boil. Add garlic. Slowly add polenta, stirring continuously. As the polenta begins to thicken, stir in 1/3 cup feta and 1/4 cup mozzarella, and herbs to taste.Grease an 8x8 pyrex pan and layer half the polenta in the bottom. Over the top spread the sauteed spinach, the sour cream, the tomato sauce, and 1/4 cup feta. Quickly spoon the remaining polenta over the top and spread evenly. Sprinkle 1/4 cup mozzarella cheese over the top.Put in the oven and bake for 20 minutes. Remove from oven and allow to sit for 5-10 minutes before serving.
