Here is how you make Mac and Cheese w/ Spinach:

Makes 4 servings, about 1 1/3 cup eachCook macaroni, drain and set aside. While pasta is cooking, bring 1 1/2 cups milk to a steam. Mix remaining milk and flour together in a bowl. When milk is steaming, whisk in the remaining milk/flour mixture and heat until simmering and thick. Stir in shredded cheese. When that is melted add cottage cheese and stir until smooth. Add nutmeg to taste. Add pasta to cheese sauce and stir to coat. Spoon have pasta into a 8x8 dish. Top with spinach. Add remaining pasta and top with breadcrumbs.
