Wring the spinach dry in a clean kitchen towel. Place the ground turkey and beef* in a large bowl and make a well in the middle. Add the spinach, half the onion, the garlic, the egg substitute, 2 T. of milk, the bread crumbs, 1/2 of the goat cheese and 1/2 of the parmesan cheese, then season with salt and pepper. Mix until combined, then form the mixture into 8 large balls. Spray a baking dish with olive oil spray, then arrange the meatballs and spray olive oil spray on the top. Roast for 25 minutes.Meanwhile, heat a small saucepan over medium heat. Melt the butter, add the reamining onion and cook for 2 minutes, then whisk in the flour. Cook for 1 minute, then whisk in the remaining milk and the broth. Bring the liquid to a boil, then stir in the remaining goat cheese and parmesan.
