Meanwhile cook macaroni until desired doneness and add edmame 5 minutes before macaroni is finished. Puree the cauliflower and carrots in a food processor or blender. Slowly add the milk, both cheeses and tofu. Puree until very smooth. In a separate small bowl mix the breadcrumbs and 1/4 cup of cheddar cheese. Mix the drained macaroni/edmame and sauce. Pour into a 2 quart casserole dish and top with the breadcrumb mixture.
