Here is how you make Healthy Mac n Cheese:

Melt butter, cook to foam. Add flour, still about a minute. Slowly whisk in milk. Add 1/8 onion with bay leaf stabbed with cloves. Stir often until thick, about 15 minutes. Remove onion/clove/bay leaf. Add salt and dash of cayenne pepper. Meanwhile, cook pasta and bacon. Drain pasta, break up bacon, mix in bowl with cheese sauce. Put entire mix into 9x13 pan spray with Pam. Process bread into breadcrumbs, add parmesan and shake on top of casserole.
