This recipe makes 2 quiches with shells, I add 2 oz skim milk moz. cheese to one and 2 oz of goats cheese to the other - I've done the nutritional comparision and it is only a 5 cal difference between the two and less than 1 g of fat. This recipe I calculated using 2% milk thickened with cornstarch or flour but I have thickened skim milk in the same way and you can save on a few more fats/calorie. I used peppers, portebella mushrooms, green onion, bacon and cheese but you can use any veggie you want - i.e. zucchini, tomato, spinach etc...

1 1/2 c 2% milk thickened with 1 tbsp flour or cornstarch
1/4 tsp sugar
1/4 tsp salt
1/4- 1/2 tsp tobasco or other hot sauce
1/2 tsp paprika
2 frozen readymade pie crust
1/4 c skim milk mozzarella cheese
1/4 c (2oz) goat's cheese (mine was rolled in Herb d'providence)
6 pieces bacon (|I use 33% less salt) - cooked and crumbled or chopped (optional but added to recipe for nutritional content)

Whisk together eggs, egg white, milk and flour and spices. Add bacon & veggies - if using only 1 kind of cheese you can add the cheese to the mixture, if separating the 2 types to 2 different pie shells, put cheese in bottom of empty pie shell and pour mixture in on top. Bake in oven at 425 for 15 min then turn oven down to 300 for an additional 30-35 min. serves 10 (with a side salad etc) or 8 as a "main" dishAlso good: zucchini, spinach, asparagus etcFat saver: skip bacon, or use peameal bacon(Cdn Bacon) or turkey bacon, or use sliced roast turkey lunch meat.
