4 pounds boneless, skinless chicken breasts (5 large breasts to a package at my market)
1/2 cup plain bread crumbs
1 cup almond meal
1/4 cup shredded parmesan cheese
salt and pepper to taste

Pound breasts so they aren't so thick for better baking. Split each breast length-wise. Salt and pepper each side to taste.

Mix almond meal, parmesan, and bread crumbs together and put in flat dish. Coat each piece of chicken on both sides. Place in large baking pan or cookie sheet. Any remaining coating, press onto top of chicken.
