The wonderful thing about gumbo is that you get to vary the recipe and it still tastes great. The original recipe is for a whole cut up hen, but I just used chicken pieces I had on hand and guesstimated on quantities of everything else. What Are The Ingredients For Chicken-Andouille Gumbo Recipe?The ingredients for Chicken-Andouille Gumbo are: 1/2 cup flour1/2 cup shortening 1.5 cup each of onion, celery, and bell peppers, chopped 3 cloves garlic, chopped 1 hen, cut up 2 pkgs andouille sausage, cut into pieces Seasonings to taste: salt, pepper, cayenne, file 12 cups water or chicken broth How Do I Make Chicken-Andouille Gumbo?Here is how you make Chicken-Andouille Gumbo: In a dutch oven, brown chicken in shortening and remove from pan. Make a roux by browning the flour in the shortening. Add the chopped onions, garlic, celery, and bell peppers and saute. Add the browned chicken back to the roux and veggies and cook together a couple of minutes. Add a cup of water to the pan and loosen the drippings on bottom of pan. Add the rest of the water, seasonings, and bouillon/water. Bring to a boil before reducing heat to a slow simmer. Leave simmering for 3 hours then add andouille sausage and simmer one more hour.
