1 c. thinly sliced yellow onion
1 large clove garlic, minced
5 ripe small apricots (quartered and pitted)
3/4 t. cinnamon
1/8 t. ginger
1/8 t. coriander
1/8 t. saffron threads
1/3 c. fat free, low sodium chicken broth
3 packets artificial sweetener (Splenda or Sweet 'N Low - I used Splenda)

Here is how you make Chicken and Fresh Apricot Tagine:

In a cooking pot large enough to hold all the pieces of chicken in one layer, heat cooking spray until hot but not smoking.Salt and pepper chicken and brown in pot for almost 4 minutes on each side. Remove chicken to a paper-towel lined plate.Add onion to pot and cook, stirring occasionally, for 5 minutes until lightly browned.Add Garlic and saute for 1 minute. Stir in apricots, spices, broth and sweetener.Place chicken on top of apricot mixture and cover.
