2 Chicken Breasts, skinned and boned, diced
4 Strips of Bacon*, diced
1 large Potato, 1/4-1/2 inch cubes
1 large Bell Pepper, diced
1 large Onion, diced
1 stalk Celery, diced
1 small can Sweet Corn niblets
1 small can Kidney Beans, rinsed
1 small can Tomato Paste
1 standard can Chopped Tomatoes
cooking spray
spices as desired
* You can of course remove the bacon, or use a bacon substitute.


How Do I Make Chicken Hash with Bacon?

Here is how you make Chicken Hash with Bacon:

Spray a large skillet with cooking spray and add the bacon. Cook until crisp and then remove to paper towel to drain off fat. Add pepper, onion and celery to skillet and cook until softened, about 3 minutes (I throw in a few tablespoons of water to keep them from sticking to bottom of pan). Remove the vegetables and set aside. Respray the skillet with cooking spray and add the chicken and potatoes. Cook, stirring to lightly brown all sides. Return the vegetables to the skillet and add the corn, kidney beans, tomato paste and tomatoes. Stir, reduce heat, cover and simmer for 20 minutes. After 20 minutes, add spices and herbs as desired, give a good stir, cover and simmer for another 20 minutes, or until the potato and chicken are thoroughly cooked. Just before serving, crumble bacon on top.
