2 Tblsp olive oil
3 oz paper thin slices pancetta or 3 slices bacon
2 garlic cloves, minced
1 pound fully cooked chicken breast strips, cut into 1 inch pieces, such as Foster Farm
3/4 cup dried cranberries
1/4 cup vermouth or Sauvignon Blanc
1 tsp fresh thyme leaves
1/2 cup almond slivers, lightly toasted
salt and pepper to taste

Here is how you make Pancetta (bacon) Chicken and Brussel Sprouts:

Wash brussel sprouts thoroughly: pat dry. Trim stems, remove yellow leaves and coarsely chop. Steam in a covered microwave safe bowl or on the stovetop for 5-6 minutes.Immediately add to an ice water bath and let cool for 5 minutes.Meanwhile, warm olive oil in a large skillet over medium high heat. Add pancetta/bacon individually and saute' until crispy, about 3 minutes. Add garlic and chicken; continue to saut? for about 4 minutes, or until the chicken is warmed through. Add dried cranberries, Sauvignon Blanc/Vermouth and thyme. Stir to combine.Drain brussel sprouts, transfer to a salad spinner, and spin until dry. Place the brussel sprouts in a large bowl. Add the chicken mixture, toasted almond slivers and salt and pepper if you wish. Gently toss together and serve immediately.
