1 16- oz package Frozen black-eyed peas
6 boneless, skinless chicken half-breasts, cubed
8 oz. Turkey Kielbasa, sliced
2 cans diced tomatoes
1 C. regular white rice, uncooked
1 C. chopped onion
3 T. Cajun Seasoning
1 C. boiling water



How Do I Make Cajun Chicken Bake?

Here is how you make Cajun Chicken Bake:

Preheat oven to 375 degrees. Spray 9X13 baking dish with Pam. Combine rice and peas in medium bowl. Pour boiling water into bowl, stir and cover. Set aside. Layer chicken in bottom of baking dish, then Keilbasa, then rice and beans mixture. Sprinkle with 1 1/2 T Cajun seasoning. Using medium bowl, stir together tomatoes and onions, then pour over layers in dish. Sprinkle with remaining seasoning. Cover with aluminum foil and bake 45 minutes.
