2-4 lb chickens
4tsp salt
2tsp paprika
1tsp onion powder
1tsp thyme
1/2tsp black pepper
1/2tsp cayenne pepper
1/2tsp garlic powder
2 onions quartered

1--In small bowel mix together salt, paprika, onion powder, thyme, pepper, and cayenne pepper. Remove and discard giblets from chicken. rinse chicken cavity and pat dry. Rub each chicken, inside and out, with spice mixture. Place one onion into cavity of each chicken. Place chickens in resealable bag or double wrap with plastic wrap.

2--Refrigerate at least 4 hours but can leave in refrigerator for up to 24 hours (better).

3--Preheat oven 250 (120C).

4--Place chickens in roasting pan. Bake uncovered for 5 hours to a minimum internal temperature of 180 degrees (85C). Let the chicken stand for 10 minutes before carving.
