Preheat oven to 350 degrees. Spray bottom of 9x13 inch baking dish with cooking spray. In a bowl, mix together flour, garlic salt, and pepper. In a separate bowl, beat together egg and milk. In a third bowl, mix together cheese, bread crumbs, and cereal. Coat each piece of chicken with flour mixture, then dip in egg mixture. Arrange in prepared baking dish. Top each piece of chicken evenly with cereal mixture. Spray top with cooking spray.
