Mix the bread crumbs, parmesan, and seasoning in a shallow bowl. Dip chicken in buttermilk (use 1/2 cup... I put 1/4 cup because that's probably what makes it onto the chicken), then dredge in the bread crumb mixture. Place in a 13x9" pan sprayed with cooking oil.Cover and refrigerate 1 hour. Bake 45 min at 350. Watch the timing, it depends on the thickness of your chicken.I would pound out pieces if they get too thick. If there's time, soaking the chicken in buttermilk might be a good plan (but it's not recommended to do more than 4 hours or so). I also think it needs more seasoning in the bread crumbs. Salt.
