8 leaves fresh basil, chopped
3 Tbsp Gorgonzola cheese (divided)
1 tsp olive oil
3 1/2 Tbsp Olivers 18 year old balsamic vinegar
2 tsp Mrs Dash Garlic & Herb Seasoning blend (divided)
1/2 tsp dried thyme
1/4 tsp black pepper
1/8 tsp sea salt
1/4 tsp chipotle pepper flakes
Pam Olive Oil cooking spray

Here is how you make Gorgonzola and Balsamic Chicken Cutlets:

Makes 4 servings or 1 1/2 chicken cutlets.Preheat oven to 400. Spray a pan (I used a small rectangular cake pan) with Pam spray to coat and set aside.Pound out cutlets nice and thin. Sprinkle each cutlet evenly with chopped basil, 2 tablespoons of cheese, 1 teaspoon of Mrs Dash, dried thyme, and chipotle pepper flakes. Roll up each cutlet (tie with twine if desired). Place each in pan. Sprinkle with olive oil, balsamic vinegar, sea salt, black pepper, 1 tablespoon of cheese, and 1 teaspoon of Mrs Dash.Bake in 400 degree oven for 20-30 minutes depending on the size of your cutlet. My 1.45 pounds of cutlets were 6 thin breasts and took 24 minutes. Baste with juices after removing from oven and allow to sit for a few minutes.Brown rice would be an excellent side in addition to steamed broccoli.Number of Servings: 4Recipe submitted by SparkPeople user MACINPAK.
