Grill Chicken Breasts (I use the Foreman Grill) & then chop into pieces.In a large non-stick pan over med heat, cook oil & onions for 1 minute.Add Cumin & Ground Coriander, cook for 4-5 minutes, stirring often or until onions are tender & spices are fragrant.Stir in tomatoes, cook for 1 minute or until very soft.Stir in chicken & beans & cook, stirring for 2-3 minutes or until heated through.Stir in fresh cilantro & lime juice.
