Cook chicken on the stove in a pan. Add the taco seasoning mix and 2/3 cup of water. Cook to a boil and reduce the heat. Add in the velveeta cheese. Let it melt. While it is melting, pour 1/2 the can of enchilada sauce into a glass (lasagna) pan. Take the tortillas and add some refried beans and then some of the cheesy chicken mixture. Roll the tortilla and place seam down over the enchilada sauce. Cover the enchiladas with the other 1/2 of the enchilada sauce and then smother with the shredded cheese. Bake in the oven for 15-20 minutes, until the cheese on top is bubbly!Makes 10 enchiladas- 1 enchilada per serving.
