Olive Oil, 1 tbsp
Brown Rice Medley, Trader Joe's - dry, 1 cup (prepared per package directions with 1 Tbsp butter)

Here is how you make Al Fresco Chipotle Chorizo Chicken Sausage with Mango and Beans:

Prepare the Rice per the package instructions. 1 cup dry rice to 2.5 cups water and 1 Tbsp butter, simmer 35 minutes. The rice is mixed in with the rest of the dish at the end.Start by chopping all the ingredients. The fruit is diced to about 1/2". The red bell pepper and onion are chopped fine. Peel the casing off the sausage, quarter lengthwise and chop crosswise to 1/2". Prepare the shelled edamame (I buy in a steam-in-bag package and cook it in the microwave). Drain and rinse the black beans.In a large non-stick saute pan, heat the olive oil. Saute the onion until it just starts to brown. Add the red bell pepper, and saute until the pepper is just softening. Add the sausage; continue to saute until the sausage begins to brown. Add the fruit, and cook until it begins to soften, about 5-7 minutes. Add the salsa, beans and edamame.
