1 bone-in, skin-on chicken
1 T. olive oil (use more if needed)
salt and pepper
3/4 to 1-1//4 c. chicken broth (or water)
1 shallot, minced
1 T. flour
1/2 tsp. dried sage
1/4 tsp. powdered rosemary
1 T. white wine or lemon juice
1 T. butter


How Do I Make Skillet Braised Chicken?

Here is how you make Skillet Braised Chicken:

Remove wings and discard (use for another recipe or a batch of stock). Cut chicken into 8 pieces (2 drumsticks, 2 thighs, 4 breast pieces). Remove any loose skin, but keep skin on where it's attached.Pat chicken dry very well. If you don't, it won't brown/crisp. Season well with salt and pepper.Heat 1 teaspoon oil in 10-12 inch skillet over medium heat. (If you skillet isn't well seasoned, you may need more oil). Lay chicken in skillet, skin side down, and cook undisturbed for 5-7 minutes, till skin is crisp and golden. Flip chicken pieces in skillet so they're all skin-side up, and add 3/4 cup chicken broth to the skillet. Cover and cook 12 to 15 minutes, till all pieces are mostly cooked through. Remove chicken from skillet and keep warm. Pour cooking liquid out of pan into a measuring cup. Set aside to separate. Return empty skillet to stove; heat 1 tsp. oil (if needed) in skillet and then return chicken pieces to skillet, skin side down. Let cook an additional 4-5 minutes, until skin is crisped and chicken is completely cooked through. Remove chicken to serving plate--keep warm.Skim fat from pan drippings and add enough broth or water (or wine) to measure 3/4 cup liquid. Heat final teaspoon in same skillet over low heat. Add shallot and cook a minute or so, till softened. Add flour and cook, stirring constantly, for 30 seconds (mash lumps with the back of your spoon). Add sage, rosemary, and reserved cooking liquid to skillet. Bring to a simmer and cook, stirring constantly, for 2-3 minutes, till sauce has reduced to by 1/3. Remove skillet from heat and whisk in wine and butter. Stir till thoroughly incorporated. Serve chicken with sauce. Goes great with crusty bread, or roast potatoes and winter squash.
