Chop the onion and set asideMince the garlic and set asideZest the lemon (just the yellow part -- chop if necessary until it is fine)...set asidePound the 3 (3 oz each) chicken breasts until about 1/4 inch thick.Cook the orzo according to package directions EXCEPT cook for 2 minutes LESS than directed.Spray a non-stick skillet with cooking spray.
