2 Tbsp. butter, divided
20 oz. skinless, boneless chicken (for 2 people)
4 Tbsp. minced shallots or onions
4 tsp. flour
1 1/2 cup chicken broth
1 cup canned plum tomatoes, chopped
1/2 tsp salt
1 Tbsp. chopped fresh parsley


How Do I Make Chicken Veloute?

Here is how you make Chicken Veloute:

In large skillet, heat 4 tsp. butter until bubbly & hot; add chicken and cook, turning once, until browned on both sides and when pieced with fork, juices run clear. Remove from skillet and keep warm. In same skillet, heat remaining butter until hot; add shallots and saute lightly (do not brown). Sprinkle with flour and stir quickly to combine; gradually stir in chicken broth and cook over medium heat, stirring constantly, until thickened. Reduce heat to low, add tomatoes and salt and cook for 5 minutes longer. Add browned chicken, turning to coat with sauce and cook for 5 minutes longer. Serve over hot rice and sprinkle with parsley.
