2 whole chicken breasts, split. Skin removed
salt and seasoned pepper
1/4 cup butter
1/4 cup shallots, minced
1 clove garlic, minced
1 tsp paprika
4 cups broccoli, freshly steamed and hot
4 canned cling-peach halves, drained and rinsed
1 cup light sour cream
1/4 cup light mayonnaise
1/4 cup Parmesan


How Do I Make Lighter Maria's Chicken?

Here is how you make Lighter Maria's Chicken:

Preheat oven to 375. Season chicken with salt and pepper. Melt butter in small skillet over medium heat, add shallots and garlic and saute until tender. Stir in paprika and turn chicken in the mixture until well coated. Put chicken in shallow broiler-proof baking dish. Cover loosely with foil and bake in oven 20 minutes. Arrange well-drained brocccoli and peaches in pan. Mix sour cream and mayonnaise and spoon over all. Sprinkle with cheese.
