1 c seasoned panko breadcrumbs
2 plum tomatoes, sliced very thin

1. Butterfly slice the chicken breasts. Cover with a piece of plastic wrap and pound very thin with a kitchen mallet.2. Place pieces of mozzarella, basil, and tomatoes on one side of chicken.3. Very carefully roll up the chicken breast. Place seam-side-down on a plate. Let rest while you prepare the dredging station.4. Set up dredging station. Put flour in first bowl, egg and milk, whisked, in second bowl, and seasoned breadcrumb in the third. Very carefully roll chicken into flour, then egg mixture, then breadcrumb. Place on a prepared baking sheet (olive oil spray). Season with your favorite spices to taste (I use salt, pepper, garlic powder, onion powder, ground mustard, parsley, and paprika).5.
