1/2 cup chopped onion
1/4 cup cashew halves
2 tbsp reduced sodium soy sauce
1 cup reduced sodium chicken broth
2 1/2 cups brown rice (uncooked)

Here is how you make Cashew Chicken by sparkles:

Makes about 5-6 1 1/2 cup servings In a small bowl, add about 3/4 cup water and ramen noodles. Cook in your microwave for about 4 1/2- 5 minutes. While the ramen is cooking,spray a large skillet with nonstick cooking spray and heat up. Add snow peas, onions, mushrooms, stirring frequently until tender; set aside. Add the chicken to the pan, seasoning with salt, pepper, and garlic to taste. When the chicken is no longer pink, add the vegetables back into the pan. Also add the bowl of ramen noodles, broth and all. You may also add the chicken broth, sesame oil, and soy sauce. While the broth cooks down on the chicken mixture, begin to cook the rice. I used 2 1/2 cups instant brown rice cooked in about 3 cups water. After the liquid has boiled down a little in the chicken pan, add the cashews.
