2 lbs boneless, skinless chicken breast
6 boneless, skinless chicken thighs

1/2 c Mirin (rice wine)
1 T cornstarch
1T baking soda

sweet pepper, medium
2 celery sticks
4 stalks green onion
1 c matchstick carrots
1 c frozen, frenched green beans
2 4-oz cans sliced Shiitake mushrooms
1 1/2 c raw unsalted cashews
1 T garlic paste
1 T ginger paste

1/4 c Hoisin sauce
1/4 c coconut aminos
1/4 c sesame oil


How Do I Make Exotec's Cashew Chicken?

Here is how you make Exotec's Cashew Chicken:

Cut chicken into similar sized pieces - about 3/4" cubes, or thin strips. Place chicken pieces into a plastic zipper bag or marinade container. Mix together Mirin, cornstarch, and baking soda. Pour over chicken pieces and marinade for approximately 15-20 minutes while you prepare vegetables.Lightly microwave 1 cup of matchstick carrots.Chop a small sweet pepper, 2 celery sticks, and 4 green onion bunches. Set raw veggies aside.Rinse marinated chicken pieces *well*, and pat dry.Heat a couple of tablespoons coconut oil in a heavy skillet. [You may also use peanut oil, but other oils will break at the high temps necessary for stir-frying. You can use other oils if you only pan-sear, but the final product won't be as crispy as the stir-fry.]Add the raw veggies to the heated pan and stir rapidly until they're cooked but still slightly crisp. This may have to be done in batches, adding oil between each batch.Quickly stir-fry the dried chicken parts in single-layer batches, adding coconut oil between each batch. DO NOT OVERCOOK. Keep the meat moving while cooking to avoid browning. Add divided portions of garlic paste and ginger paste to each batch. Lightly stir fry the matchstick carrots, frozen beans, sliced shiitakes, and cashews in a couple tablespoons of coconut oil. All cooked ingredients may be removed to a large container where they can be easily mixed. Prepare a sauce of 1/4 c Hoisin sauce, 1/4 c coconut aminos,1/4 c sesame oil, and enough Mirin to make it liquidy. Add portions of the mixed cooked ingredients back to the pan and lightly finish with the sauce added. I was able to make 12 1-cup servings of this meal. It freezes well if portioned out, and can be microwaved if it's not overcooked (mushy).
