1 stick unsalted butter
1 6 oz. box of stuffing mix (I used whole wheat)

1 cup shredded carrots
1 cup fat free sour cream
1 can of cream of chicken (I used the 98% fat free/460 mg sodium kind)

1/4 cup onion
4 cups zucchini
2 chicken breasts


How Do I Make Chicken and Zucchini Casserole?

Here is how you make Chicken and Zucchini Casserole:

1. Preheat oven to 350 degrees.2. Boil zucchini and onion in water for 5 minutes and drain.3. In a medium bowl, combine soup, sour cream, and carrots. Then stir in the zucchini and onion.4. Boil the chicken for 15 mins or so, then drain. Add this to the zucchini mixture.5. Melt butter and mix it with stuffing (in a bowl separate from the one with zucchini mixture).6. Put 1/2 of the butter/stuffing mix into the bottom of a 9x13" baking dish. Spoon the zucchini mixture over the stuffing, then top off with the other half of the stuffing.7. Bake @ 350 degrees for 25 to 30 minutes or until stuffing is golden brown.I thought it was good for having tons of veggies and not a lot of calories or sodium. Might be better for some people as a side dish rather than the main dish.You can take the chicken out and add more veggies if you choose - I added the chicken to get a bit more protein.Number of Servings: 6Recipe submitted by SparkPeople user LEGANS.
