Spray 13 X 9 baking pan with butter flavor cooking spray. Cut partially thawed chicken breasts into bite size pieces. In a large skillet, preferably cast iron, saute onion in olive oil until just translucent. Remove onion from pan and set aside.Add chicken pieces to remaining olive oil in skillet and brown evenly. In a large pot, heat 6 cups of water to boiling. Add egg noodles and boil for approximately 5 minutes or until noodles are al dente (do not over cook or the noodles will become to mushy in the casserole). Remove and set aside, Boil or steam broccoli until just tender.
