16 oz Mushrooms, sliced
1 can Campbell's Cream of Mushroom Soup, 25% Less Sodium
1 cup Swanson Chicken Broth 33% Less Sodium
1/2 cup Sour Cream
1 tsp Thyme, ground
1 fl oz Red Wine (2 tablespoons)

salt and freshly ground pepper to taste
Matzoh meal or bread crumbs
chopped parsley

Here is how you make Creamy Chicken Thigh Casserole:

Preheat oven to 350 degrees Fahrenheit.Use pan spray to coat an 11 x 17 glass pan. Mix soup, broth, sour cream, thyme and red wine in a medium bowl with whisk.Pour enough in pan to lightly coat bottom of pan and then layer chicken thighs in pan, covering the entire bottom of pan. At this point, add salt and pepper over chicken. Next, sprinkle Lipton soup mix over raw chicken.Layer mushroom slices over chicken.Pour remaining soup/broth/ cream/wine mixture over chicken.Sprinkle matzoh meal or bread crumbs over casserole, use only about 1/4 cup. You are not trying to blanket the casserole. Press crumbs into sauce with the back of a spoon.Bake casserole uncovered for approx. 55-65 minutes. That will reduce the sauce and cook the chicken.Serve over rice or quinoa.Food that's all one color looks bland and unappealing--sprinkle chopped parsley over portions before serving.
