Boil chicken until done. Rinse chicken and shred. Set aside. In a small square baking pan, spray bottom and sides with cooking spray. Put enough enchilada sauce to barely cover the bottom. Arrange 4 corn tortillas on bottom of pan to cover (I usually cut them in half to make it easy). Add enchilada sauce to cover tortillas, using back of a spoon to spread. Sprinkle half the shredded chicken over the tortillas. Sprinkle with a third of the cheese. Repeat layer starting with the tortillas. For final layer, use tortillas, sauce and remaining cheese only.
