4 Cups California Blend Vegetables (I sometimes us a little more depending on how big the vegetables are)
2 Bonless/Skinless Chicken breasts cut into bite size pieces
1 Jar Ragu Double Cheddar Cheese Sauce
1 sleeve (approximately 30 crackers) Ritz Whole Wheat Crackers
2 Tablespoons butter or margarine melted
1 Tablespoon Olive Oil

Here is how you make Geraine's California Blend Casserole with Chicken:

Partially cook the vegetables in a 2 quart pot (or you can steam them). Cut up chicken breasts into bite size cubes and brown in a olive oil until they are no longer pink.Drain vegetables and add chicken and Ragu Cheese sauce to vegetables, toss until everything is covered with the sauce.Place Crackers in a zip lock bag or in a food processor and crumble. Add crackers to the 2 Tablespoons of melted butter or margarine and mix together.Pour Vegetable mixture into a 2 quart casserole dish then sprinkle cracker mixture over the top evenly.Place in 350 degree oven for 45 minutes (I usually turn on the broiler for the last couple of minutes to brown the crackers on top, watch so they don't get too dark)Serve with a green salad and enjoyServing size is approximately 1 1/2 cups or 1/4 of the contents of the casserole dishNumber of Servings: 4Recipe submitted by SparkPeople user GERAINE.
