1 can 98% Fat Free Cream of Mushroom or Cream of Chicken Soup
1/2 package Old El Paso Taco Seasoning Mix (40% Less Sodium)
1 cup shredded cheddar cheese
6 oz Tortilla Chips (yellow corn is best)
10 oz diced tomatoes with green chiles
1 cup chopped onions

Here is how you make Julie's Chicken Mexican Casserole:

1. Set up your slow cooker with a nifty slow cooker liner bag (Reynold's makes good ones. They make for easy cleanup)2. Chop onions. (If you'd like to add any additional veggies, such as peppers, chop them up now with the onions)3. Mix Cream of Mushroom soup, 1 can of tomatoes and green chili peppers, 1/2 package of 40% less sodium taco seasoning and chopped onions/veggies in medium bowl.4. Place chicken breasts (ok if frozen) in slow cooker and cover with contents of bowl.5. Cook on Low for 6-7 hours6. Once chicken has about 1/2 hour left, preheat oven to 350 degrees.7. Cook Rice-a-Roni as directed on package.8. Add cooked rice to the chicken mixture in slow cooker. Use tongs to break apart the chicken so it looks shredded. 9. Spread a layer of corn tortilla chips on the bottom of a 9"x13" baking pan.10. Spread half chicken mixture on layer of chips.11. Layer chips on top of chicken mixture. Spread remaining half on top of chips.12. Sprinkle cheddar cheese on top.13.
