Bring water to boil in a large dutch oven over medium/high heat. Add broccoli and boil for 5 minutes or until done. Transfer broccoli to large bowl. Put chicken in boiling water; reduce heat and let simmer 15 minutes/until done; tranfer chicken to bite sized pieces and add to broccoli in bowl. Combine evaporated milk, flour, salt, pepper & nutmeg in saucepan, stirring w/ whisk until smooth. Bring to a boil over medium/high heat; cook 1 minute stirring constantly. Remove from heat. Add mayo, sour cream, sherry, worcestershire, soup, and 1/2 cup of parmesean stirring until well combined. Add mixture to broccoli mix and stir gently.Spoon mixture into 13 x 9 baking dish coated w/ spray. Sprinkle cheese on top evenly, Bake at 400 for 50 minutes - let cool for 15 minutes.
