Keebler Club Crackers, 1 package (there are 4 packages in one box)
Low Fat Cream of Mushroom Soup, 0.5 cup
Campbells Cream of Chicken Soup- 98% Fat Free, 0.5 cup
Butter, salted, .5 stick
Sour Cream, reduced fat, 1 cup

9x14 glass baking dish
frying pan
ziplock bag, gallon size
aluminum foil


How Do I Make Reduced Fat Chicken Casserole?

Here is how you make Reduced Fat Chicken Casserole:

1. Preheat oven to 350 degrees. 2. Crush 1 pack (one pack, not the whole box) of Keebler Club Crackers in a ziplock bag.3. Melt 1/2 stick of Butter. Pour into the bag of cracker crumbs and seal. Shake and crush crackers to coat evenly with butter. 4. After the cracker crumbs are evenly coated, pour 1/2 of the crumbs into a 9x14 glass baking dish and press to the bottom of the dish. (Set aside the other 1/2 of cracker crumbs for later use.)5. Cook chicken breasts in frying pan until almost cooked (a little pink in the center is good; do not cook thoroughly). Chop chicken breasts into 1 inch cubes and set aside. 6. Combine 8 oz. Sour Cream, 1 can Reduced Fat Cream of Mushroom Soup, 1 can 98% Fat Free Cream of Chicken Soup. Stir in chicken.7. Pour mixture into the glass baking dish, on top of the crackers. Then, evenly sprinkle the left over cracker crumbs on top. 8. Cover dish with aluminum foil and bake for 30-45 minutes, or until the casserole is bubbling around the sides and crackers on top are golden brown.***At step 6, I usually add Salt and Pepper to taste, a pinch of Minced Garlic, and sometimes a can of sliced Water Chestnuts. It depends on your taste. The Minced Garlic actually makes a big difference, and everyone seems to prefer it with the garlic.
