1 lg onion, diced
5 large garlic cloves, crushed
2 large bell peppers, diced
1 tsp cumin
1/8 tsp cayenne pepper

2 cups frozen corn, thawed and drained
2 cups Colby Jack cheese, shredded and divided
1 tbsp garlic powder
1 jalapeno seeded and minced

Here is how you make Santa Fe Chicken and Lentil Casserole:

In a medium pot, combine lentils and broth. Bring to a boil on high, reduce heat to low, cover and cook for 35 minutes. Do not drain excess liquid. Set aside.Meanwhile, preheat large skillet on high and spray with cooking spray. Add chicken and cook for 5 minutes. Stir occasionally. Drain any liquid if necessary. Add cumin, pepper, and cayenne, then cook for another 5 minutes. Transfer to a large bowl and set aside.Preheat oven to 350. Return skillet to medium high head and spray again. Add onion, garlic, bell peppers, cumin, and cayenne pepper. Cook for 7 minutes or until golden brown, stirring occasionally.Transfer to bowl with chicken along with lentils, diced tomatoes, corn, and 1 cup of the cheese, jalapeno peppers, garlic powder, cumin and 1/2 cup of cilantro. Mix gently with spatula to combine. Adjust spices as you like.Transfer mixture into a 9X13 cake pan. Level/press gently into pan. Sprinkle with remaining cheese an bake uncovered 50 minutes.Remove from oven, cover with foil and let stand for 30 minutes before serving.
