1 cup whole wheat pasta cooked
1 can fat free mushroom soup (preferably condensed)
2 tablespoons heavy whipping cream
1.5 cups fresh mushrooms
1 cup marsala cooking wine
1/2 cup cooking sherry
Parmesan and mozzarella cheeses
Idahoan instant mashed potatoes


How Do I Make Skillet Chicken Marsala Casserole?

Here is how you make Skillet Chicken Marsala Casserole:

Cut up chicken into one inch cubes before cooking. Use nonstick spray to coat 10" skillet. Sautee chicken and mushrooms together until browned (about halfway cooked) on medium high heat.In a separate pot, prepare pasta according to directions on box, only add 1/2 amount of water, and the other 1/2 marsala cooking wine.Add 1 cup marsala cooking wine and 1/2 cup cooking sherry to the chicken and mushrooms. Allow to simmer. Add 1 can of low fat mushroom soup and stir. Add in 2 tablespoons of heavy cream and continue to stir. Do not allow chicken to stick to bottom of skillet. Stir the pasta into the mixture when cooked, reduce heat and simmer on low medium.In another pot, make instant potatoes according to directions on packaging. Allow to cool after cooking.Layer the bottom of a bowl 1/2 cup mashed potatoes and top with chicken marsala casserole.
