Coat a casserole dish (approximately 9x13) with cooking spray, and set aside.Heat a large nonstick frying pan over medium heat. Add olive oil, chicken and onion. Pour the mixture into the prepared casserole dish.Cover the casserole with aluminum foil, and bake for 30 minutes. Then, uncover and bake for an additional 10 minutes.Serve hot.
