1/4 cup chicken broth or water
1 clove garlic, minced
5 Medjool dates, pitted and diced
1/2 cup pine nuts
3 chicken breasts, boneless and skinless
1-2 tbsp extra virgin olive oil

Here is how you make Chicken Andrew:

Preheat oven to 400 F.Heat the EVOO in a skillet over medium heat. Add garlic and cook until fragrant, about 15-20 secs.Add broth and immediately add spinach, tossing until wilted. Remove spinach to bowl or cookie sheet to cool.Combine diced dates, pine nuts, goat cheese and spinach, season with salt and pepper to taste. Place a chicken breast between two pieces of plastic wrap and hammer flat with a rubber mallet till 1/2 inch thick. Spoon 1/3 of the filling into the middle of the chicken breast and roll meat around it, tying shut with two pieces of butcher's twine. Repeat for other two breasts.Space evenly in a glass baking dish and cover loosely with aluminum foil. Bake in oven for 25 minutes, then uncover and cook another 10 minutes till juices run clear.
