4 dried dates, pitted and chopped
2 c. fresh spinach leaves
1/2 t. paprika

Here is how you make Chicken Breasts Stuffed with Goat Cheese, Dates and Spinach:

Preheat the oven to 425 F. Line a baking sheet with parchment paper. Place chicken between two pieces of plastic wrap. Flatten breasts to 1/4 inch thick with mallet. Place the chicken breast smooth side up on parchment. Spread each breast with 1 T. goat cheese leaving a 1/2 inch border. Sprinkle with cayenne and dates. Top with spinach. Beginning at the narrowest end, roll each piece jelly-role style. Place seam side down and sprinkle with paprika.Bake 20 minutes.
