I used to make this all the time for my parents in CA, and back then I was using white flour tortillas, full fat cheese and butter. Even using a light spread and part skim mozzarella, this dish is higher in fat and calories than I planned. I am sure this is gonna taste great even if you halve the amount of cheese used!! Please try it!!

4.5 servings chicken breast, cooked and shredded
5 TB white, all purpose flour
5 TB I can't believe its not butter, lite
salt and pepper to taste
10 Mission fajita size carb balance whole wheat tortillas
16 oz shredded part skim mozzarella or monterey jack cheese ( I used both)
1 4oz can chopped green chilies
2 cups milk (skim or 1% okay)

Here is how you make Chicken California:

First you have to cook your chicken. Boil, steam, poach, whatever you prefer. I stuck mine in the crockpot for a few hours. Let cool, then shred.Get a saucepan, add your butter spread. When melted add your flour and mix well. You may need to add a little more spread. Cook about 1 minute. Add milk and wisk until smooth. Continue stirring over med high heat until boiling and boil 1-2 minutes until thickened. Add salt/pepper to taste. Remove from heat.Spray a large baking dish with nonstick spray. Take a tortilla, add a small amount of chicken, cheese, cream sauce and green chilis to the middle. Roll up and place in baking dish. Repeat until all tortillas have been used. Pour remaining cream sauce over the top and sprinkle remaining cheese on top of the sauce.Bake 20 minutes at 350 degrees.2 burritos per serving, serves 5****NOTE~you can definitely reduce the fat by using half the cheese.
