2 C. low fat, low sodium chicken broth
1 1/2 lb. boneless, skinless chicken breast
2 tsp. Olive Oil
2 leeks, cleaned and sliced thin
1/2 lb. cremini or button mushrooms chopped
3 cloves garlic, sliced
1 lb. broccoli, cut into bite sized pieces
1 cup cooked cannellini beans or 1 15oz. can drained and rinsed
1/2 C. Parmigiano-Reggiano cheese, grated
1/2 C. low-fat cottage cheese
2 Tbsp. fresh chopped chives
1 tsp fresh chopped thyme
1 Tbsp. Lemon Juice
1/4 tsp black pepper
1 cup reduced fat cheddar cheese


How Do I Make Chicken Divan (CE)?

Here is how you make Chicken Divan (CE):

-Preheat oven to 350- In a medium saucepan bring broth to a boil. Add chicken and cover for 5 minutes. Take off the heat and poach chicken for 12-15 minutes covered.-While chicken poaches, heat oil in large saute pan over medium high heat. When hot, add leeks and mushrooms. Cook, stirring occasionally until veggies are tender and liquid has cooked out about 10-15 minutes. Add garlic and saute for 30 seconds and remove from heat and set aside.-When chicken is done remove from saucepan using tongs. Cover Saucepan and return to a boil. Cut chicken in 1/2 inch pieces and set aside. Add broccoli to the boiling broth, cover pan again and simmer until fork tender and not mushy about 5-7 minutes. Lift broccoli with a slotted spoon into a 13 x 9 inch baking dish. Set aside, reserve broth.-Add beans, cottage cheese, Parmigiano-Reggiano cheese, chives, and thyme in a blender. Add leeks and mushrooms and carefully add broth. Puree until smooth.-In a bowl, mix lemon juice and pepper with chicken. Pour half of the sauce over the chicken and stir. Spread over broccoli and top with remaining sauce. Top with cheese and transfer to the oven for about 15 minutes.
