1 lb. lean ground chicken
1/2 large sweet onion, chopped
1 medium yellow bell pepper, chopped
1 4 oz. can of mild green chilies, chopped
1 1/2 cloves of garlic, minced
1 19 oz can of Las Palmas enchilada sauce
1 cup of Kraft shredded Mexican 4-cheese blend
1 cup of Borden shredded Pepper Jack cheese
9 El Milagro corn tortillas
1 tbsp ground cumin
1 tbsp chili powder
1 tbsp dried oregano
1 tsp cayenne red pepper
Dash of salt & pepper
1 tbsp olive oil


How Do I Make Chicken Enchiladasagna?

Here is how you make Chicken Enchiladasagna:

- Preheat the oven to 350 degrees. Heat the olive oil in a pan and saute the onions and yellow pepper until translucent. Add the ground chicken and garlic, breaking up the meat with a wooden spoon. Season the chicken mixture with cumin, chili powder, cayenne, salt & pepper. Stir and cook until chicken is no longer pink, about 8 to 10 minutes. Add about 1/4 cup of the enchilada sauce to the mixture and let simmer on low for another 10 minutes.- Pour a scant 1/4 cup of the enchilada sauce in the bottom of a glass 9" round, ovenproof casserole dish to lightly coat the bottom surface. Layer 1 tortilla on the bottom, then spoon some of the filling on top of the tortilla. Sprinkle some of both cheeses on top of the filling. For the next layer, use 2 tortillas and follow the same order: sauce, tortillas, filling, & cheese. For the third layer, use 3 tortillas (they will overlap) and follow the same order. For the final layer, layer sauce and then cheese. Bake uncovered for 30 minutes until cheese is bubbly and slightly browned. Let stand for at least 10 minutes before serving.
