1 chicken Breast, no skin, no bone
1 cup cooked spinach
1 cup sauteed mushrooms
1 cup cooked broccoli
1 tbsp parmesan cheese grated
Tomato pasta sauce to taste
Potatoes (I love baby potatoes, but roast, mash or baked is fine)
Rosemary & olive spice
mixed spices
cooking spray

Here is how you make Chicken Parmisano:

This is for one serving. Just adjust accordingly for more than one! I use the microwave to do the veggies as it is quick and I just add water and seasoning so there is no oil. Steaming or sauteing the vegetables is fine too. 1) Preheat oven to 200 degrees Celsius. 2) Spray roasting tray with cooking spray3) Spray chicken with cooking spray4) Slice a pocket into the chicken5) Sprinkle chicken with spices6) Put spinach and sliced mushrooms in microwave dish with a little water and garlic, chilli & herb seasoning. Microwave for 2 mins. 7) Follow this with broccoli in the same way8) Place a tablespoon (or less, or more) of the spinach/ mushroom mix into the pockets in the chicken. Add a tbsp of Parmesan to the pocket9) Close pocket and sprinkle chicken with Parmesan10) Put chicken in the oven for 15 - 20 minutes until cooked and golden11) Prepare baby potatoes with herbs & garlic and a drizzle of olive oil12) Heat the tomato sauce13) Add the spinach/ mushroom mix to the broccoli14) When the chicken is done, serve all together, drizzling the tomato pasta sauce on the chicken.
