What Are The Ingredients For Cousin Cosmo's Chicken Recipe?The ingredients for Cousin Cosmo's Chicken are: 2 tbsp flour, divided1/2 tsp salt (I use garlic salt) 1/4 tsp pepper (I use garlic pepper) 1/4 lb feta cheese, crumbled 1 tbsp fresh lemon juice 1 tsp dried oregano 6 boneless, skinless chicken breast halves 2 tbsp olive oil 1 1/2 c chicken stock 2 cups loosely packed fresh spinach leaves 1 c. cherry tomatoes How Do I Make Cousin Cosmo's Chicken?Here is how you make Cousin Cosmo's Chicken: Combine 1 tbsp flour, salt, & pepper on a large plate.On another plate, combine cheese, lemon juice, & oregano.Set aside.With a meat mallet, pound each chicken breast to 1/2 inch thickness. Spread cheese mixture onto each breast, leaving 1/2 inch border. Fold chicken breasts in half; secure each with a toothpick. Coat chicken breasts with flour mixture.In a large skillet, heat oil over medium heat. Cook chicken breasts for 1 to 2 minutes on each side, until golden. Pour chicken stock over chicken breasts. Add tomato & bring to a boil. Cover, reduce heat to low, & simmer 8-10 minutes (or until chicken is no longer pink inside). Add spinach in the last 1 - 2 minutes of simmering.
