2 cups 2% Lactaid Milk
2 Tbsp butter
2 Tbsp Corn Starch (I use organic GMO free)
salt and pepper to taste
8 oz Cabot Seriously Sharp Cheddar Cheese, shredded (Cabot brand is hormone free)

Additional cheese for top, about 2 oz.

about 2-3 cups shredded cooked chicken (from a whole baked chicken or shredded baked breasts)
GF BBQ Sauce (I make my own, but you can use any gluten free brand)

Here is how you make Gluten Free BBQ Chicken Topped Mac-n-Cheese:

Cook pasta until just cooked... do not overcook.Whisk salt/pepper and cornstarch into cold milk. Melt butter in pot, then add milk and stir constantly over MH heat, until mixture thickens and comes to a low boil.Reduce heat and add 8 oz shredded cheese, stirring until melted. Remove and add pasta, stir to coat. Pour into lightly greased (butter or coconut oil) deep casserole dish. Combine shredded chicken and enough bbq sauce to moisten chicken but not make it soupy, usually 1/4 to 1/3 cup. You can heat it or not, I do because it speeds cooking in the oven.Carefully spread over top of pasta in even layer.Sprinkle with remaining cheese.Bake uncovered for 25-30 minutes until bubbly and cheese on top is melted at 350 degrees.
