3 tbsp flour
1 cup chicken broth
2 cups skim milk
1 tbsp olive oil
1.5 pounds boneless skinless chicken breasts or tenders
1 pound pasta
salt to taste
2.5 cups low fat cheddar cheese

Here is how you make Macaroni and Cheese w/Chicken and Broccoli:

Place oil in a large skillet to cook the chicken. Cut chicken into cubes (be sure to trim any excess fat). When the oil is warm place the chicken in the skillet on a medium heat. Meanwhile, boil your water for your pasta. In a small saucepan place 3 tbsp butter (can substitute low fat butter) until melted, top w/3 tbsp flour to create a thick mixture. Cook on low heat until bubbling. Next add 2 cups of skim milk while whisking the butter/flour mixture. Add chicken broth & let the mixture thicken on a low-medium heat. Be sure to continue mixing w/the whisk so the sauce does not burn. When the mixture has thickened remove from the heat & add the cheese. Cook pasta & broccoli as per directions on the box.
