Here is how you make Stuffed Chicken Thighs (spinach and cheese):

Chop onions and saut? until softened. Add Spinach and cook until done. Pound out chicken thighs to 1/4" thickness. In center add 1/4 of spinach mixture and one wedge of laughing cow cheese (broken into clumps). Roll chicken around the stuffing and secure with toothpicks. Repeat with remaining three thighs. Add hot sauce to small bowl and add seasoning mix to plastic bag. Place a chicken roll in bowl and coat with hot sauce. Allow excess to drip off and then place the roll into the plastic bag with the coating mix. Shake to cover. Place roll in a small glass baking pan that has been coated with PAM.
