salt and pepper as desired (Keep in mind goat cheese is salty)

Mix all marinade ingredients and marinade for 15 mins or more if desired.Cut chicken into fillets and pound. I cut into 8 fillets.Spread goat cheese evenly among all fillets, then add some crush garlic and artichokes. Roll and close end with toothpick.Heat oil in a pan and place chicken until it gets crispy on all sides, about 10 minutes.Bake at 375 degrees for 15 mins or so. Just watch to make sure you're not drying it.
