2 15-oz cans of dark sweet cherries

1 cup unsalted or low sodium chicken stock

2 tbsp balsamic vinegar

1tbsp olive oil

Salt, pepper, poultry seasoning to taste

Here is how you make Cherry Glazed Chicken:

Mix ingredients together. Simply stir if you like your sauce chunky, or blend to make it more of a puree. Bring to a boil, stirring occasionally. Meanwhile, season chicken with a dash or salt & pepper along with poultry seasoning or Mrs. Dash (these bring out the natural flavor of the chicken and don't clash with the cherry flavor of the sauce). Lightly coat a baking pan with 1 tbsp olive oil, or a couple shots of PAM and put the chicken on it. Then pour 3/4 of the sauce on top of the chicken. Bake for 30-40 minutes at 400 degrees.Transfer the remaining cherry sauce to a bowl for those who like their chicken smothered.Serving Size:?makes 5 4-oz servings
