Heat oil in pan that will just fit 4 thighs with only a little extra space (on medium).Sprinkle chicken with salt, pepper and any other seasonings - I like a little bit of rosemary, thyme, curry powder, and parsley. Or put them in the oil and just salt & pepper.Put chicken in pan & cover. Reduce to really really low heat.Cut onion into small pieces and mince garlic; add on top of the chicken. Cut potato into fairly big bites, add on top.Cut carrots into fairly big pieces, add (you add & cut in this order to give the chicken the most time to cook, then the onions, then the potatoes...etc).After about 1 to 1.5 hours (depending on how low you can get your heat), the potatoes should be almost done.
